| Make Crusting
2 cups Honey
Roasted Peanuts
¼ cup All-Purpose Flour
½ cup Shredded Parmesan Cheese
Place peanuts and flour in a food processor and pulse until the consistency of coarse bread crumbs. A few larger pieces are fine. Transfer to a small casserole dish and mix in Parmesan Cheese. Set aside.
Make egg wash
4 large Eggs
¼ cup Luke warm milk combined with
¼ cup Honey
In a small casserole dish whisk all the above ingredients. Set aside.
Make flour dredge
1 cup All-Purpose Flour
1 tbsp Poultry Seasoning
Combine the above ingredients . Set aside.
Preheat oven to 325 degrees
8 Chicken Tenders or Tilapia Filets
Salt and pepper or poultry seasoning
Lightly season chicken or tilapia with salt and pepper or poultry seasoning. Set aside
8 Chicken Tenders (or 2 per person) or 4 Tilapia Fillets (or one per person)
Peanut or olive oil
Warm fry or sauté pan, over medium heat about one minute, add enough peanut or olive oil to coat pan bottom. Dredge the Chicken or Tilapia in the flour, coating both side well and tap off excess flour. Coat Chicken or Tilapia in egg mixture and then place in the peanut mixture. With hands press the crust on both sides until completely covered. Carefully lower into hot oil. Adjust heat to medium low and sauté till golden brown. Carefully turn over and brown the other side. After 2 minutes, remove and place on a sheet pan and lightly season with salt and pepper or poultry seasoning. Set aside and finish in oven after all pieces are sautéed for about 15 -20 minutes.
